Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 4 tablespoons milk
  • 1/2 cup flour
  • 4 egg yolks
  • 2 tablespoons flour
  • 1 tablespoon baking powder
  • 4 egg whites
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped
  • 1/8 teaspoon salt

Instructions

  1. Cream the unsalted butter and 1/2 cup of sugar until light and fluffy.
  2. Add well beaten egg yolks to the creamed mixture and mix well.
  3. Stir in the milk and 1/2 cup of flour, then add the baking powder mixed with 2 tablespoons of flour.
  4. Divide the batter evenly into two greased 9-inch cake pans and smooth the tops.
  5. Bake in a preheated oven at 350°F (175°C) for about 25 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cakes are baking, beat the egg whites until soft peaks form.
  7. Gradually add 3/4 cup of sugar and continue beating until stiff peaks form.
  8. Fold in vanilla extract and chopped pecans into the meringue.
  9. Once cakes are cooled, spread the pecan meringue over the top of each cake layer or use as a topping.
