Ingredients

  • 1 lb. lean ground beef
  • 2 potatoes, peeled and cubed
  • 1 1/2 c. shredded cabbage
  • 1 medium onion, chopped
  • 1/2 c. celery
  • 2 1/2 to 3 c. hot water
  • 1 (16 oz.) can stewed tomatoes
  • 1 c. mixed vegetables
  • 1 Tbsp. beef bouillon granules
  • 1/2 tsp. oregano, crumbled
  • 1/2 tsp. salt

Instructions

  1. Crumble beef in a 3-quart microwave dish.
  2. Add potatoes, cabbage, onion, and celery to the dish.
  3. Cook on High for 6 to 8 minutes.
  4. Add all remaining ingredients; cover and microwave for 18 to 24 minutes.
