Ingredients

  • 2 cups dried Northern beans

Instructions

  1. Soak the beans in cold water overnight.
  2. If you forget to soak, cover the beans with water, bring to a boil for about 2 minutes, then remove from heat and cover for an hour. Drain and rinse the beans.
  3. In a large pot, heat the olive oil and sauté the chopped onions, celery, and carrots until tender.
  4. Add the mashed canned tomatoes, garlic halves, chopped parsley, salt, pepper, and chicken bouillon base. Cook for a few minutes.
  5. Add the soaked beans and cubed potatoes to the pot, then cover with water or broth.
  6. Bring to a boil, then reduce heat and simmer until beans and potatoes are tender, about 45-60 minutes.
  7. Adjust seasoning as needed and serve hot.
