Ingredients

  • 1 1/2 cups butter
  • 2 cups sugar
  • 6 eggs
  • 1 cup buttermilk
  • 2 teaspoons soda
  • 4 1/2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons allspice
  • 2 cups blackberry or strawberry jam
  • 1 cup raisins
  • 2 apples
  • 1 banana
  • 1 1/2 cups pecans

Instructions

  1. Cream the butter with sugar until light and fluffy.
  2. Add egg yolks one at a time, mixing well after each addition.
  3. Sift flour with cinnamon and allspice.
  4. Gradually add dry ingredients to the butter mixture, alternating with buttermilk, mixing until just combined.
  5. Beat egg whites until stiff peaks form.
  6. Gently fold egg whites into the batter.
  7. Stir in jam, raisins, small chopped apples, mashed banana, and chopped pecans.
  8. Pour batter into a greased and floured cake pan.
  9. Bake in a preheated oven at 350°F (175°C) for approximately 60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before slicing and serving.
