- Drain the pineapple, reserving the juice.
- In a bowl, mix the pineapple juice, molasses, mustard, and vinegar until well combined.
- Place the browned chicken in a 3-quart casserole dish.
- Arrange drained sweet potatoes around the chicken.
- Brush the chicken and potatoes with half of the sauce mixture.
- Cover the casserole and bake at 350°F (175°C) for 30 minutes.
- Uncover and top the chicken with pineapple slices.
