Ingredients

  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 1/2 to 3 pounds fryer chicken, cut up
  • 2 tablespoons oil
  • 2/3 cup molasses
  • 1 (8 oz) can sliced pineapple
  • 1 tablespoon prepared mustard
  • 1 tablespoon cider vinegar
  • 1 can (16 oz) sweet potatoes, drained

Instructions

  1. Combine flour, salt, and pepper in a shallow dish.
  2. Dredge chicken pieces in the flour mixture.
  3. Brown the coated chicken in hot oil in a skillet.
  4. Drain the pineapple, reserving the juice.
  5. In a bowl, mix the pineapple juice, molasses, mustard, and vinegar until well combined.
  6. Place the browned chicken in a 3-quart casserole dish.
  7. Arrange drained sweet potatoes around the chicken.
  8. Brush the chicken and potatoes with half of the sauce mixture.
  9. Cover the casserole and bake at 350°F (175°C) for 30 minutes.
  10. Uncover and top the chicken with pineapple slices.
  11. Brush with the remaining sauce.
  12. Bake uncovered for an additional 30 minutes.
