Festive Corn Bread
Ingredients
- 8 Tbsp. chilled unsalted butter, cut into 1/2 inch pieces ⓘ
- 1 c. chopped onion ⓘ
- 1 3/4 c. yellow cornmeal ⓘ
- 1 1/4 c. all purpose flour ⓘ
- 1/4 c. sugar ⓘ
- 1 Tbsp. baking powder ⓘ
- 1 1/2 tsp. salt ⓘ
- 1/2 tsp. baking soda ⓘ
- 1 1/2 c. buttermilk ⓘ
- 3 large eggs ⓘ
- 1 1/2 c. Pepper Jack cheese ⓘ
- 1/2 c. drained roasted red peppers ⓘ
- 1/2 c. chopped fresh basil ⓘ
Instructions
- Preheat oven to 400°.
- Butter 9 x 9 x 2 inch pan. Melt 1 Tbsp. butter in medium nonstick skillet over medium low heat.
- Add onion and saute until tender, about 10 minutes.
- Cool. Mix cornmeal and next 5 ingredients in large bowl.
- Add 7
- Tbsp. butter and rub in with fingertips until mixture resembles coarse meal.
- Whisk buttermilk and eggs in medium bowl to blend.
- Add buttermilk to dry ingredients and stir until blended.
- Mix in cheese, red peppers, basil and onion.
- Transfer to prepared pan.
