Ingredients

  • 8 (14 1/2 oz.) cans chicken broth
  • 1 medium onion
  • 3 carrots
  • 2 stalks celery
  • 3 medium potatoes
  • 2 Serrano peppers
  • 3 cloves garlic
  • 1 tsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. cumin
  • salt and pepper
  • 12 flour tortillas

Instructions

  1. Begin boiling the chicken broth in a large pot.
  2. Chop the onion, carrots, celery, potatoes, Serrano peppers, and garlic.
  3. Add the chopped vegetables and peppers to the boiling broth.
  4. Cut the tortillas into rough 1-inch squares and set aside.
  5. Let the soup boil for 30 to 45 minutes until vegetables are tender.
  6. Add the tortilla pieces along with garlic powder, cayenne pepper, cumin, salt, and pepper.
  7. Reduce the heat and simmer for an additional 15 minutes.
  8. Serve hot.
