Ingredients

  • 8 oz. fettucini
  • 10 oz. frozen chopped spinach
  • 1 clove garlic
  • 1/4 cup olive oil
  • 1 teaspoon chicken bouillon
  • 1/2 cup water or spinach juice
  • 1/2 teaspoon basil leaves
  • 1 cup lite cottage cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large skillet, cook spinach and garlic in olive oil for 5 minutes, stirring frequently.
  2. Dissolve chicken bouillon in water or spinach juice.
  3. Add the bouillon mixture, basil, and cottage cheese to the spinach in the skillet.
  4. Stir over low heat to blend all ingredients.
  5. Toss the cooked fettucini, grated Parmesan and Romano cheeses, and the spinach mixture together in a heated large bowl.
  6. Garnish with fresh parsley.
  7. Refrigerate leftovers if any.
