Ingredients

  • 2 lb. pink beans
  • 1 to 1 1/2 lb. salt pork
  • 3 to 4 garlic cloves
  • 3 to 4 medium onions, slivered
  • 2 Tbsp. vegetable oil
  • 1 large can tomatoes
  • 1 small can tomatoes
  • 4 Tbsp. sugar
  • 2 Tbsp. chili powder
  • 4 Tbsp. vinegar
  • 2 Tbsp. Worcestershire sauce
  • 1 or more tsp. crushed red chilies

Instructions

  1. Pick over and rinse the pink beans.
  2. Place the beans in a large pot and cover with water so that the water is about 2 inches above the beans.
  3. Mince the garlic and cut the salt pork into 1/4 x 1/4 x 1-inch pieces, then add both to the beans.
  4. Bring the mixture to a boil and simmer until the beans are tender, approximately 2 to 4 hours.
