Ingredients

  • 1 beaten egg
  • 1/4 c. milk
  • 1/2 c. finely crushed saltine cracker crumbs
  • 1/4 c. chopped onion
  • 1/2 tsp. salt
  • dash of pepper
  • 1 lb. ground beef
  • 1 c. cooked rice
  • 2 oz. process Swiss cheese, shredded
  • 2 Tbsp. chopped green pepper

Instructions

  1. Combine the beaten egg, milk, crushed saltine cracker crumbs, chopped onion, salt, and pepper.
  2. Add ground beef to the mixture and mix well.
  3. Pat the beef mixture into a 10 x 8-inch rectangle on waxed paper.
  4. In a separate bowl, combine cooked rice, shredded Swiss cheese, and chopped green pepper.
  5. Spread the rice mixture onto the meat, leaving a 1-inch margin around the edge.
  6. Roll the meat mixture jelly-roll style, starting from the narrow side.
  7. Seal the side seam and ends of the roll.
  8. Place the roll seam side down in an 11 x 7 x 1 1/2-inch baking pan.
  9. Bake at 350°F for 35 minutes.
  10. Let stand for 5 minutes before serving.
