Fish Gumbo

Ingredients

  • 1 lb. fish fillets
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • finely chopped garlic
  • 1/4 cup oil
  • 2 beef bouillon cubes
  • 2 cups boiling water
  • 1 (1 lb.) can tomatoes
  • 1 (10 oz.) package frozen sliced okra
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon thyme
  • 1 whole bay leaf

Instructions

  1. Cut fish into 1-inch pieces.
  2. Cook chopped celery, green pepper, onion, and garlic in oil until tender.
  3. Dissolve bouillon cubes in boiling water.
  4. Add bouillon, canned tomatoes, sliced okra, salt, pepper, thyme, and bay leaf to the vegetable mixture.
  5. Cover and simmer for 30 minutes.
  6. Add fish to the mixture.
  7. Cover and simmer for an additional 15 minutes or until the fish flakes easily when tested with a fork.
  8. Remove bay leaf.
  9. Place 1/4 cup cooked rice into each bowl.
  10. Fill each bowl with the fish gumbo and serve.
