Flank Steak With Herb Stuffing

Ingredients
- 1 medium onion, chopped
- 1 4 oz can mushroom stems, drained ⓘ
- 2 tablespoons butter ⓘ
- 1/4 cup parsley ⓘ
- 1 egg, slightly beaten ⓘ
- 1-2 lb flank steak ⓘ
- 1 1/2 cups bread crumbs ⓘ
- 1 teaspoon poultry seasoning ⓘ
- 1/2 teaspoon salt ⓘ
- dash of pepper ⓘ
- 2 tablespoons shortening ⓘ
- 1 10 1/2 oz can beef bouillon ⓘ
Instructions
- Saute chopped onion and drained mushroom stems in butter over medium heat until golden.
- In a bowl, combine parsley, bread crumbs, poultry seasoning, salt, pepper, and the beaten egg. Mix in the sautéed onions and mushrooms.
- Using a sharp knife, score the surface of the flank steak on both sides in a diamond pattern.
- Place the mushroom mixture lengthwise down the center of the steak, then bring both ends together on top and fasten with string at 1-inch intervals or use skewers.
- Add 2 tablespoons of shortening to a skillet and brown the steak well on all sides over medium heat.
- Place the browned steak in a roasting pan, add beef bouillon, cover, and bake at 350°F for about 1.5 hours or until the meat is fork tender.
- Remove the meat from the pan and let it rest on a heated platter.
- Remove the string or skewers, then cut the steak into slices.
- Optional: Thicken the pan juices to serve as a gravy with the meat.
