Ingredients

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1/2 tsp. salt
  • pepper
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 2 Tbsp. cooking oil
  • 12 corn tortillas
  • 1 can enchilada sauce
  • 1 cup grated cheese
  • chopped black olives, optional

Instructions

  1. Brown the ground beef and chopped onion together in a skillet.
  2. Add salt, pepper, chili powder, and cumin to the beef mixture and cook until well combined.
  3. Soften the tortillas by dipping them in hot cooking oil, then drain on paper towels.
  4. Dip each tortilla in heated enchilada sauce, then layer on individual plates with the meat mixture and grated cheese.
  5. Place the assembled plates in a 350°F oven to melt the cheese.
  6. Serve with shredded lettuce and chopped tomatoes.
