Ingredients

  • 12 fluted lasagna noodles
  • 2 Tbsp. butter
  • 3/4 cup chopped onion
  • 2 (10 oz each) packages frozen spinach, thawed and drained
  • 1 1/2 cups shredded Mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup dairy sour cream
  • 1 egg, slightly beaten
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 1/2 tsp. instant chicken bouillon
  • 1/8 tsp. pepper
  • 1 cup light cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook lasagna noodles according to package instructions.
  3. Drain and cool noodles in a large bowl of cold water; set aside.
  4. Saute chopped onions in 2 tablespoons butter until tender.
  5. Thaw and drain frozen spinach thoroughly.
  6. In a mixing bowl, combine spinach, shredded mozzarella, grated Parmesan, sour cream, and slightly beaten egg.
  7. Spread a thin layer of the spinach mixture onto each cooked lasagna noodle.
  8. Roll up each noodle to enclose the filling.
  9. Prepare the sauce by melting 1/4 cup butter in a saucepan.
  10. Stir in 1/4 cup flour to make a roux.
  11. Add 1 1/2 teaspoons instant chicken bouillon, pepper, and light cream, stirring constantly until smooth and thickened.
  12. Place the rolled noodles in a baking dish.
  13. Pour the sauce over the roll-ups.
  14. Bake in the preheated oven for about 35 minutes, or until bubbly and golden.
