- Gradually stir in milk until smooth.

- Bring to boil over medium heat and boil 1 minute.
- Remove 1 cup sauce and set aside.
- Stir Swiss cheese into remaining sauce until melted.
- Cook sweet Italian sausage until browned.
- Cook jumbo shells in boiling salted water until al dente, then drain.
- Sauté onion until translucent.
- Mix cooked sausage, sautéed onion, pepper, and spinach.
- Stuff cooked shells with sausage mixture.
- Place stuffed shells in a baking dish.
- Pour remaining sauce over shells.
- Sprinkle Parmesan cheese on top.
- Bake at 375°F (190°C) for 20 minutes or until bubbly and golden.
