  1. In a 2-quart saucepan, stir together cornstarch and 1 teaspoon salt.
  2. Gradually stir in milk until smooth.
  3. Add margarine, stirring constantly.
  4. Bring to boil over medium heat and boil 1 minute.
  5. Remove 1 cup sauce and set aside.
  6. Stir Swiss cheese into remaining sauce until melted.
  7. Cook sweet Italian sausage until browned.
  8. Cook jumbo shells in boiling salted water until al dente, then drain.
  9. Sauté onion until translucent.
  10. Mix cooked sausage, sautéed onion, pepper, and spinach.
  11. Stuff cooked shells with sausage mixture.
  12. Place stuffed shells in a baking dish.
  13. Pour remaining sauce over shells.
  14. Sprinkle Parmesan cheese on top.
  15. Bake at 375°F (190°C) for 20 minutes or until bubbly and golden.
