A hearty layered casserole combining spinach or broccoli, seasoned ground beef, rice, and cheesy mushroom gravy for a comforting family meal.

Ingredients

  • 10 oz. frozen chopped spinach or broccoli
  • 2 cups hot cooked rice
  • 1 cup shredded Swiss cheese, divided
  • 1 large egg
  • 1 lb. ground chuck
  • 6 oz. can tomato paste
  • 1 3/4 oz. envelope mushroom gravy mix
  • 2/3 cup water
  • 1/4 teaspoon basil

Instructions

  1. Microwave the frozen chopped spinach or broccoli in the package on High for 3 to 4 minutes to defrost, then drain and set aside.
  2. In a skillet, cook the crumbled ground chuck until browned.
  3. Stir in the tomato paste, mushroom gravy mix, water, and basil; cook until the mixture thickens slightly.
  4. Layer cooked rice in the bottom of a greased baking dish.
  5. Add a layer of the cooked meat mixture over the rice.
  6. Spread the drained spinach or broccoli over the meat layer.
  7. Sprinkle half of the shredded Swiss cheese over the vegetables.
  8. Repeat the layers: rice, meat mixture, vegetables, and cheese.
  9. Top with remaining Swiss cheese.
  10. Bake at 350°F (175°C) for 20-30 minutes until heated through and cheese is bubbly.
