Ingredients

  • 1 cup yellow cornmeal
  • 1 cup milk
  • 2 eggs
  • 1 (16 oz.) can cream-style corn
  • 1 lb. diced deer meat or hamburger, browned and drained
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup oil
  • 1 lb. Cheddar cheese, grated
  • 1 onion, finely chopped
  • 3 or 4 jalapeno peppers, minced

Instructions

  1. Mix the cornmeal, milk, eggs, cream-style corn, baking soda, salt, and oil in a bowl.
  2. Pour half of the batter into a greased 9 x 13-inch casserole dish or cast-iron skillet.
  3. Sprinkle with grated cheddar cheese, then add the cooked and drained deer meat or other ground meat over the cheese.
  4. Sprinkle the chopped onion and minced jalapeno peppers over the meat.
  5. Pour the remaining batter over the top.
  6. Bake at 350°F (175°C) for 50 minutes until golden and cooked through.
