Ingredients

  • 1 cup Arborio rice
  • 1 cup bean sprouts
  • 1 cup bean sprout liquor
  • 2 cups chicken broth
  • 1/4 cup cooking oil
  • 2 hard-boiled eggs, chopped very fine
  • 3/4 cup cooked ham
  • 3/4 cup cooked chicken
  • 1/3 cup diced green pepper
  • 1/2 cup chopped onion
  • 2 oz. cut mushrooms

Instructions

  1. Wash the rice well.
  2. In a skillet with a cover, add 1/4 cup cooking oil. Add raw rice; cover and brown, shaking and stirring to prevent burning.
  3. Add 1/2 cup of chicken broth and 1/2 cup of bean sprout liquor to the skillet.
  4. Cover and cook for 15 minutes.
  5. Repeat adding broth and liquor until all liquid is absorbed and rice is cooked, approximately 1 1/4 hours.
  6. Add chopped onion; cover and cook for 5 minutes.
  7. Add bean sprouts, bean sprout liquor, cooked ham, cooked chicken, diced green pepper, mushrooms, and chopped eggs. Cook covered for another 5 minutes.
  8. Mix the ingredients carefully.
  9. Garnish with chopped eggs and parsley before serving.
