Sweet and hearty fruit bars combine dried mixed fruit, bananas, oats, and cinnamon for a wholesome snack or dessert, perfect for grab-and-go treats and family gatherings.

Ingredients

  • 6 oz dried mixed fruit
  • 2 medium bananas, chopped
  • 2/3 cup orange juice
  • 1 teaspoon ground cinnamon
  • 1 3/4 cups wheat flour
  • 1 cup brown sugar
  • 1 1/2 cups oats
  • 1/2 teaspoon ground cinnamon
  • 2 sticks margarine
  • 1/2 cup chopped nuts

Instructions

  1. Preheat oven to 375°F.
  2. Combine dried mixed fruit, chopped bananas, orange juice, and ground cinnamon in a medium bowl. Set aside.
  3. In a large bowl, beat together margarine and brown sugar until creamy.
  4. Add wheat flour, oats, and 1/2 teaspoon cinnamon to the margarine mixture. Beat until crumbly.
  5. Reserve 3/4 cup of the oats mixture for topping.
  6. Press the remaining oat mixture into a 13 x 9-inch baking pan.
  7. Bake for 15 minutes.
  8. Spread the fruit mixture evenly over the partially baked crust, within 1/4 inch of the edges.
  9. Combine chopped nuts with the reserved oats mixture and sprinkle over the fruit layer.
  10. Pat down lightly to press the topping into the fruit layer.
  11. Bake for an additional 16 to 20 minutes, or until golden brown.
  12. Allow to cool completely before cutting into 32 bars.
