Ingredients

  • 2 scant c. butter
  • 3 scant c. brown sugar
  • 6 eggs, separated and beaten
  • 1/2 c. molasses
  • 1/2 c. sour milk
  • 1/2 tsp. nutmeg
  • 1 Tbsp. cinnamon
  • 1 tsp. cloves
  • 1 tsp. mace
  • 1 c. cherry juice
  • 1 c. pineapple juice
  • 7 c. flour
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 1 tsp. lemon extract
  • 1/2 c. wine
  • 1 lb. box currants
  • 1 lb. box raisins
  • 1 pkg. lemon peel
  • 1 pkg. orange peel
  • 1 pkg. citrus peel
  • 1 can pineapple
  • 2 bottles cherries
  • 1 lb. chopped dates
  • 2 c. walnuts

Instructions

  1. Cream the sugar and butter.
  2. Add the nutmeg, cinnamon, cloves and mace. Add molasses and milk.
  3. Add beaten egg yolks and mix well. Add the cherry juice, pineapple juice, flour, soda, vanilla, lemon extract and wine.
  4. Mix well.
  5. Mix together the currants, raisins, lemon peel, orange peel, citrus peel, pineapple, cherries, dates and walnuts and mix together with cake mixture. Add beaten egg whites last, folding them in.
  6. Bake in a 325° oven for 1 hour.
  7. Test for doneness.
  8. Bake longer, if necessary. Toothpick should come out dry.
