Ingredients

  • 1 egg
  • 1 cup buttermilk
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped dates or raisins
  • 1/2 cup nuts

Instructions

  1. Heat oven to 350°F (175°C).
  2. Spray an 8 x 4 x 3-inch loaf pan with butter or nonstick cooking spray.
  3. In a large bowl, combine egg, buttermilk, and brown sugar.
  4. Add flour, baking soda, and salt, stirring to blend.
  5. Add oats, chopped dates or raisins, and nuts.
  6. Stir well, then turn the mixture into the prepared loaf pan.
  7. Bake for 40 to 45 minutes or until the bread is brown and firm to touch.
