Ingredients

  • 1 (No. 303) can garbanzo beans, drained
  • 1 cup chopped celery
  • 1/2 cup minced green onions
  • 1 (4 oz.) can pimentos, chopped
  • 1/2 cup olive oil
  • 2 Tbsp. red wine vinegar
  • 1 (2 oz.) can anchovies
  • 1 1/2 tsp. prepared mustard
  • 1 tsp. salt
  • 2 hard-cooked eggs, chopped

Instructions

  1. Combine all ingredients, saving enough anchovies and eggs for garnish.
  2. Toss gently to mix everything thoroughly.
  3. Serve in individual bowls lined with lettuce.
  4. Garnish each with chopped eggs and anchovy strips.
