Ingredients

  • 1 1/2 cups cottage cheese
  • 1/2 cup sour cream
  • 1 tablespoon flour
  • 3 eggs
  • 2 tablespoons minced onion
  • 1 1/2 teaspoons pepper
  • 2 (10 oz.) packages chopped broccoli, cooked and drained
  • 1 1/2 teaspoons salt
  • 1 (17 oz.) can corn
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Beat or blend cottage cheese, sour cream, flour, eggs, minced onion, salt, and pepper together.
  2. Fold in the cooked and drained chopped broccoli and corn.
  3. Pour the mixture into a 2-quart casserole dish.
  4. Sprinkle grated Parmesan cheese on top.
  5. Bake at 325°F (163°C) for 45 minutes until set and golden.
