Ingredients

  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 2 cups chopped dates
  • 1 cup chopped walnuts
  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 2 eggs

Instructions

  1. Mix flour, baking soda, cinnamon, allspice, and cloves. Set aside.
  2. In a large bowl, cream the softened butter and brown sugar until smooth.
  3. Add eggs one at a time, beating well after each addition.
  4. Alternately add the flour mixture and beer to the creamed mixture, beginning and ending with the flour mixture, and blend well after each addition.
  5. Stir in chopped dates and walnuts.
  6. Pour the batter into a well-greased 12-cup fluted tube pan.
  7. Bake at 350°F (175°C) for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the cake for 10 minutes in the pan.
  9. Invert onto a rack to cool completely.
  10. Wrap in foil and let sit for 24 hours before serving.
  11. Optional: sprinkle with confectioners' sugar before serving.
  12. Serve with Rum Butter Spread, if desired.
