Ingredients

  • 4 oz. noodles
  • 2 Tbsp. butter
  • 1/2 tsp. salt
  • dash of pepper
  • 1/4 tsp. caraway seed
  • 4 oz. sliced bologna, cut into 1/2-inch cubes
  • 1/2 c. shredded Brick cheese
  • 2 eggs, well beaten
  • 1 c. cottage cheese
  • 1 c. dairy sour cream
  • 1/4 c. minced onion
  • 1/4 c. diced celery

Instructions

  1. Cook noodles according to package directions; drain.
  2. Meanwhile, in a saucepan, melt butter.
  3. Add minced onion, diced celery, salt, caraway seed, and pepper; sauté until tender.
  4. Stir in noodles, cottage cheese, sour cream, and bologna.
  5. Pour mixture into a casserole dish.
  6. Spread shredded Brick cheese over the top.
  7. Pour beaten eggs evenly over the casserole.
  8. Bake for 35 to 40 minutes.
  9. Allow casserole to stand for 10 minutes before serving.
  10. Garnish with bologna slices, if desired.
