- Cream butter and sugar together until light and fluffy.
- Add eggs one at a time, beating well after each addition, then mix in vanilla.
- Sift together flour, nutmeg, allspice, and cinnamon.
- Alternately add the flour mixture and buttermilk (to which soda has been added), mixing well after each addition.
- Gently fold in the cherry, pineapple, and apricot preserves, along with the pecans.
- Pour batter into a greased tube pan.
- Bake at 325°F (160°C) for 90 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before removing from the pan. Serve moist.
