Ingredients

  • 3/4 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1/2 teaspoon vanilla
  • 3 cups flour
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 2/3 cup cherry preserves
  • 2/3 cup pineapple preserves
  • 2/3 cup apricot preserves
  • 1 cup pecans

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs one at a time, beating well after each addition, then mix in vanilla.
  3. Sift together flour, nutmeg, allspice, and cinnamon.
  4. Alternately add the flour mixture and buttermilk (to which soda has been added), mixing well after each addition.
  5. Gently fold in the cherry, pineapple, and apricot preserves, along with the pecans.
  6. Pour batter into a greased tube pan.
  7. Bake at 325°F (160°C) for 90 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool before removing from the pan. Serve moist.
