Ingredients

  • 1 lb. lean ground beef
  • 1 can water chestnuts, drained and chopped
  • 1 egg
  • 1 clove garlic, crushed
  • 1 tsp. packed brown sugar
  • 1 tsp. soy sauce
  • 1 tsp. ground ginger
  • 1 (8 oz.) can crushed pineapple in juice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix ground beef, water chestnuts, egg, garlic, brown sugar, soy sauce, and ground ginger until well combined.
  3. Spread the beef mixture evenly in an ungreased 9 x 5 x 3-inch loaf pan.
  4. Bake uncovered for 1 hour. Drain excess fat and juices.
  5. Spoon crushed pineapple over the meatloaf.
  6. Bake for an additional 30 minutes or until the center is no longer pink.
