Ingredients

  • 2 1/4 c. flour
  • 2 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 12 Tbsp. unsalted butter
  • 1 c. brown sugar
  • 1 egg
  • 1/3 c. molasses
  • granulated sugar

Instructions

  1. Combine flour, ground ginger, ground cinnamon, baking soda, and salt in a bowl.
  2. With an electric mixer set at medium low speed, beat butter and brown sugar until fluffy.
  3. Beat in egg and molasses until well combined.
  4. Reduce speed to low and gradually beat in the flour mixture until just incorporated.
  5. Chill the dough until firm, about 1 hour.
  6. Heat oven to 350°F (175°C).
  7. Shape the dough into 1-inch (2.5 cm) balls.
  8. Roll the balls in granulated sugar and place about 2 inches apart on an ungreased cookie sheet.
  9. Bake until edges just start to brown, about 15 minutes.
  10. Cool on the cookie sheet for 2 minutes before transferring to a wire rack to cool completely.
