Ginger Steamed Fish features tender fish infused with fresh ginger and savory soy-sherry sauce, perfect for a light, aromatic meal that highlights delicate flavors and simple preparation.

Ingredients

  • 2 lb. fish, cleaned with head and tail on
  • flour
  • 3 or 4 Tbsp. peanut oil
  • 1 c. hot water
  • 1/4 c. shoyu sauce
  • 1/4 c. dry sherry
  • 1/2 tsp. raw sugar
  • 2 Tbsp. ginger, peeled and cut into thin strips
  • 2 to 4 green onion shoots, sliced into 2-inch pieces

Instructions

  1. Wash the fish under cold running water.
  2. Pat dry the fish.
  3. Rub a little flour onto the fish skin surfaces.
  4. Heat 3 or 4 tablespoons of peanut oil in a steamer or large pot.
  5. Place the fish in the steamer and steam until cooked through, about 10-15 minutes depending on size.
  6. In a small saucepan, combine hot water, shoyu sauce, dry sherry, and raw sugar. Bring to a gentle simmer.
  7. Add the ginger strips and sliced green onion to the sauce and cook for 2-3 minutes.
  8. Pour the hot sauce over the steamed fish before serving.
