Ingredients

  • 2 cups chicken broth
  • 1 cup orange juice
  • 1 cup pearl barley
  • 1 medium orange
  • 1/2 teaspoon salt
  • 1/3 cup sliced green onions
  • 2 tablespoons butter
  • 10 slices deli ham
  • 1/2 cup orange marmalade
  • 1/2 teaspoon ground ginger
  • 1/4 cup chopped pecans

Instructions

  1. In a large saucepan, combine chicken broth, orange juice, and pearl barley.
  2. Grate the orange to make 1 teaspoon of zest.
  3. Add the orange zest and salt to the barley mixture.
  4. Bring to a boil.
  5. Reduce heat, cover, and simmer for 45 to 60 minutes or until liquid is absorbed and barley is tender.
  6. Peel the orange, discard the peel, and chop the orange.
  7. Saute the orange segments and green onions in butter until tender.
  8. Add the sauteed orange and onions to the barley mixture.
  9. Spoon 1/4 cup of the barley filling onto each ham slice.
  10. Roll up the ham slices and place seam side down in a greased 13 x 9-inch baking dish.
  11. Spoon the remaining barley mixture around the ham rolls.
  12. Mix marmalade and ground ginger together.
  13. Spoon the marmalade mixture over the ham rolls.
  14. Sprinkle chopped pecans over the top.
  15. Bake uncovered at 350°F (175°C) for 15 to 20 minutes or until heated through.
