Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 3 eggs
  • 3/4 cup buttermilk
  • 1/2 cup oil
  • 1 1/2 teaspoons vanilla
  • 2 cups shredded carrots
  • 1 cup coconut
  • 1 cup chopped pecans

Instructions

  1. In a large bowl, mix flour, sugar, cinnamon, baking soda, salt, nutmeg, and cloves.
  2. In a small bowl, beat eggs slightly.
  3. Stir in buttermilk, oil, and vanilla into the eggs.
  4. Add the wet mixture to the flour mixture and stir until smooth.
  5. Fold in shredded carrots, coconut, chopped pecans, and drained crushed pineapple.
  6. Pour the batter into a greased and floured 9-cup tube pan.
  7. Bake in a preheated oven at 350°F (175°C) for 45 to 50 minutes.
  8. Allow the cake to cool in the pan for 10 minutes.
  9. Remove from the pan and prick the cake with a fork to allow glaze to penetrate.
