Ingredients

  • 6 Tbsp. shortening
  • 2 medium onions
  • 2 bouillon cubes
  • 2 Tbsp. chopped parsley
  • 1/4 tsp. thyme
  • 3 lb. cubed beef
  • 1 c. red wine
  • 1 clove garlic
  • 1 bay leaf
  • 1 Tbsp. salt
  • 3 medium potatoes
  • 2 turnips
  • 4 to 5 carrots
  • 1 (8 oz.) can tomatoes
  • olive oil

Instructions

  1. Brown the cubed beef in shortening in a large pot.
  2. Remove the beef and set aside.
  3. Add a little olive oil and butter to the same pot and sauté the onions until translucent.
  4. Return the browned beef and its juices to the pot.
  5. Add water, red wine, bouillon cubes, garlic, parsley, bay leaf, thyme, salt, and pepper.
  6. Cover and simmer for 1 1/2 hours.
  7. Add the cubed potatoes, turnips, and sliced carrots, and cook until tender.
  8. Twenty minutes before the end of cooking, add the canned tomatoes.
