Ingredients

  • 2 cups sifted flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup margarine
  • 1 egg, beaten
  • 3/4 cup orange juice with pulp
  • 1 1/2 cups raisins
  • 1/4 cup chopped walnuts
  • 1 1/2 cups cranberries, chopped

Instructions

  1. Sift flour, sugar, baking powder, salt, and baking soda into a large bowl.
  2. Cut in margarine until the mixture becomes crumbly.
  3. Add beaten egg and orange juice all at once, then stir until evenly moistened.
  4. Fold in raisins, chopped walnuts, and chopped cranberries.
  5. Spoon the batter into a greased 9 x 5 x 3-inch loaf pan.
  6. Bake at 350°F (175°C) for 1 hour and 10 minutes.
  7. Allow to cool on a rack before serving.
