Ingredients

  • 5 Tbsp. oil or bacon drippings
  • 2 c. corn meal
  • 3/4 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 c. sugar
  • 2 eggs
  • 1 1/2 c. buttermilk

Instructions

  1. Preheat a heavy skillet in a 375°F (190°C) oven with 3 tablespoons of oil or bacon drippings.
  2. Mix cornmeal, flour, baking powder, baking soda, salt, and sugar together in a bowl.
  3. Set the dry ingredients aside.
  4. In a separate bowl, beat the eggs and then add the buttermilk.
  5. Combine the wet ingredients with the dry ingredients and stir until just blended.
  6. Carefully pour the batter into the preheated skillet.
  7. Bake in the oven at 375°F (190°C) until golden brown and a toothpick inserted in the center comes out clean, about 20 minutes.
