Ingredients

  • 1/2 lb. hamburger
  • 1 onion
  • 1 can mixed vegetables
  • 1 cup corn
  • 1 to 1 1/2 cup ketchup
  • 1 box cornbread mix
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Prepare the cornbread mix as directed on the box; set aside.
  2. In an iron skillet, cook the hamburger and diced onion until browned; drain excess fat.
  3. Add the mixed vegetables and corn to the cooked meat mixture; stir well.
  4. Mix in ketchup until evenly combined.
  5. Spread a thin layer of prepared cornbread batter over the meat and vegetable mixture in the skillet.
  6. Bake at 325°F (163°C) until the cornbread topping is golden brown.
