Ingredients

  • 6 oz. linguine
  • 1 c. fresh mushrooms
  • 1 medium fresh green pepper
  • 1 sweet red pepper
  • 1 clove garlic
  • 1 (14 oz.) can artichoke hearts
  • 1/2 c. reduced calorie Italian salad dressing
  • 3 Tbsp. sliced, pitted ripe olives
  • 1 Tbsp. chopped parsley
  • 1/2 c. shredded Mozzarella cheese

Instructions

  1. Cook linguine according to package directions, omitting salt. Drain and keep warm.
  2. In a large skillet, sauté the mushrooms, green pepper, and red pepper strips until tender.
  3. Add minced garlic and cook for another minute.
  4. Stir in the artichoke hearts, salad dressing, olives, and chopped parsley. Heat through.
  5. Add the cooked linguine to the skillet and toss to combine.
  6. Sprinkle with shredded mozzarella cheese and serve immediately.
