Gumbo File
A hearty Louisiana-style gumbo featuring shrimp, oysters, crab meat, and sausage, infused with rich flavors of bacon fat, herbs, and file powder for a comforting seafood feast.
Ingredients
- 1 lb. shrimp, cleaned ⓘ
- 2 dozen oysters ⓘ
- 1 small young hen ⓘ
- 1/2 lb. hot sausage ⓘ
- 2 onions, finely chopped
- 6 cloves garlic
- 2 green peppers ⓘ
- 6 fresh tomatoes
- 1 lb. crab meat ⓘ
- 6 Tbsp. parsley ⓘ
- 1/2 cup bacon fat ⓘ
- 1/2 teaspoon sugar ⓘ
- 4 Tbsp. flour ⓘ
- 4 Tbsp. file powder ⓘ
- 1 1/2 to 2 quarts water ⓘ
- 4 sprigs thyme ⓘ
- salt, pepper, and cayenne to taste ⓘ
Instructions
- Fry chicken until partially done.
- Add sausage, crab meat, onions, garlic, green peppers, and parsley.
- Fry for 2 minutes.
- Add flour and brown.
- Add water, tomatoes, and sugar; boil for 15 minutes.
- Add shrimp and cook for 10 minutes.
- Add oysters and cook for 5 minutes.
- Remove from heat.
- Add file powder and keep pot covered until served.
- Serve over rice.
