A hearty Louisiana-style gumbo featuring shrimp, oysters, crab meat, and sausage, infused with rich flavors of bacon fat, herbs, and file powder for a comforting seafood feast.

Ingredients

  • 1 lb. shrimp, cleaned
  • 2 dozen oysters
  • 1 small young hen
  • 1/2 lb. hot sausage
  • 2 onions, finely chopped
  • 6 cloves garlic
  • 2 green peppers
  • 6 fresh tomatoes
  • 1 lb. crab meat
  • 6 Tbsp. parsley
  • 1/2 cup bacon fat
  • 1/2 teaspoon sugar
  • 4 Tbsp. flour
  • 4 Tbsp. file powder
  • 1 1/2 to 2 quarts water
  • 4 sprigs thyme
  • salt, pepper, and cayenne to taste

Instructions

  1. Fry chicken until partially done.
  2. Add sausage, crab meat, onions, garlic, green peppers, and parsley.
  3. Fry for 2 minutes.
  4. Add flour and brown.
  5. Add water, tomatoes, and sugar; boil for 15 minutes.
  6. Add shrimp and cook for 10 minutes.
  7. Add oysters and cook for 5 minutes.
  8. Remove from heat.
  9. Add file powder and keep pot covered until served.
  10. Serve over rice.
