Hearty homemade cabbage rolls filled with seasoned ground pork, steak, and rice, simmered in a flavorful tomato sauce—perfect for comforting family dinners and gatherings.

Ingredients

  • 1 medium onion
  • 1 tsp. Hungarian paprika (sweet)
  • 2 lb. ground pork
  • 2 lb. ground round steak
  • 2 c. rice, uncooked
  • 1 tsp. salt
  • 1/4 c. catsup
  • 1/4 c. water
  • 1 (32 oz.) can whole peeled tomatoes
  • 1 (6 oz.) can tomato paste
  • water to cover
  • 2 Tbsp. olive oil
  • 1 large head cabbage
  • 2 tsp. salt

Instructions

  1. Chop the onion finely and sauté in olive oil.
  2. Add paprika to the onion and oil mixture; set aside.
  3. Parboil the whole head of cabbage until the leaves are just transparent, but not too soft.
  4. Remove the cabbage leaves one at a time as they are blanched.
  5. If the section near the core is too thick, pare some off with a thin knife.
  6. Set the cabbage leaves aside.
  7. Mix together ground pork, ground round steak, rice, salt, pepper, catsup mixed with water, and the sautéed onion and paprika mixture.
  8. Optionally, add one egg to the meat mixture, if desired.
  9. Take a cabbage leaf and place a small handful of the meat mixture in the center.
  10. Fold over one side of the leaf, then roll the cabbage completely over the meat to form a roll.
  11. Tuck the remaining end of the cabbage leaf in by pressing your finger into it.
  12. If there is excess cabbage at the end, trim it off.
  13. Arrange chopped cabbage in the bottom of a large pot and layer the cabbage rolls on top.
  14. Add the canned peeled tomatoes and tomato paste to the pot.
  15. Rinse sauerkraut and place on top of the tomato layer.
  16. Add water to cover the contents completely.
  17. Cover the pot with a lid and bring to a boil over medium heat.
  18. Reduce heat and simmer for 2 hours.
  19. Serve hot, enjoying the rich flavors of the seasoned meat and tomato sauce.
