Halupki For Beginners
Hearty homemade cabbage rolls filled with seasoned ground pork, steak, and rice, simmered in a flavorful tomato sauce—perfect for comforting family dinners and gatherings.
Ingredients
- 1 medium onion ⓘ
- 1 tsp. Hungarian paprika (sweet) ⓘ
- 2 lb. ground pork ⓘ
- 2 lb. ground round steak ⓘ
- 2 c. rice, uncooked ⓘ
- 1 tsp. salt ⓘ
- 1/4 c. catsup ⓘ
- 1/4 c. water ⓘ
- 1 (32 oz.) can whole peeled tomatoes
- 1 (6 oz.) can tomato paste ⓘ
- water to cover ⓘ
- 2 Tbsp. olive oil
- 1 large head cabbage ⓘ
- 2 tsp. salt ⓘ
Instructions
- Chop the onion finely and sauté in olive oil.
- Add paprika to the onion and oil mixture; set aside.
- Parboil the whole head of cabbage until the leaves are just transparent, but not too soft.
- Remove the cabbage leaves one at a time as they are blanched.
- If the section near the core is too thick, pare some off with a thin knife.
- Set the cabbage leaves aside.
- Mix together ground pork, ground round steak, rice, salt, pepper, catsup mixed with water, and the sautéed onion and paprika mixture.
- Optionally, add one egg to the meat mixture, if desired.
- Take a cabbage leaf and place a small handful of the meat mixture in the center.
- Fold over one side of the leaf, then roll the cabbage completely over the meat to form a roll.
- Tuck the remaining end of the cabbage leaf in by pressing your finger into it.
- If there is excess cabbage at the end, trim it off.
- Arrange chopped cabbage in the bottom of a large pot and layer the cabbage rolls on top.
- Add the canned peeled tomatoes and tomato paste to the pot.
- Rinse sauerkraut and place on top of the tomato layer.
- Add water to cover the contents completely.
- Cover the pot with a lid and bring to a boil over medium heat.
- Reduce heat and simmer for 2 hours.
- Serve hot, enjoying the rich flavors of the seasoned meat and tomato sauce.
