Ingredients

  • 8 oz. long-grain rice
  • 16 oz. water
  • 1/2 tsp. salt
  • 1 Tbsp. butter
  • 2 eggs
  • 4 Tbsp. vegetable oil
  • 4 oz. French beans
  • 10 oz. cooked ham
  • 1/2 tsp. black pepper
  • 4 small spring onions
  • 1 Tbsp. chopped fresh coriander

Instructions

  1. Put rice, water, and salt in a medium-sized saucepan.
  2. Bring the water to a boil over high heat.
  3. Cover the pan, reduce the heat to low, and simmer for 15 to 20 minutes or until the rice is tender and the water has been absorbed.
  4. Remove the pan from the heat and set aside.
  5. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  6. Add the beaten eggs and scramble until cooked, then remove and set aside.
  7. Add the remaining 2 tablespoons of vegetable oil to the skillet.
  8. Add the cooked rice, French beans, and diced ham, stirring well to combine.
  9. Cook for a few minutes until heated through.
  10. Add the scrambled eggs back to the rice mixture.
  11. Season with black pepper and chopped spring onions.
  12. Stir in chopped fresh coriander before serving.
