- Put rice, water, and salt in a medium-sized saucepan.
- Bring the water to a boil over high heat.
- Cover the pan, reduce the heat to low, and simmer for 15 to 20 minutes or until the rice is tender and the water has been absorbed.
- Remove the pan from the heat and set aside.
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the beaten eggs and scramble until cooked, then remove and set aside.
- Add the remaining 2 tablespoons of vegetable oil to the skillet.
- Add the cooked rice, French beans, and diced ham, stirring well to combine.
- Cook for a few minutes until heated through.
- Add the scrambled eggs back to the rice mixture.
- Season with black pepper and chopped spring onions.
- Stir in chopped fresh coriander before serving.
