Ingredients

  • 2 lb. boned pork, cut in 1-inch pieces
  • 1 (3 to 4 oz.) can mushrooms
  • 1 (14 oz.) can pineapple chunks
  • 1/3 cup unsulphured molasses
  • 1 tablespoon soy sauce
  • 1/4 cup vinegar
  • 2 green peppers, cut in strips
  • 2 medium onions, sliced
  • 1 1/2 tablespoons cornstarch
  • 6 cups hot cooked rice

Instructions

  1. Brown the pork pieces in a large skillet.
  2. Drain the mushrooms and pineapple chunks; combine and measure the liquids.
  3. Add enough water to the measured liquid to make 2 cups.
  4. Add the liquid mixture to the skillet and bring to a boil.
  5. Cover and reduce heat; simmer for 1 hour.
  6. Stir in molasses, soy sauce, and vinegar.
  7. Add the mushrooms, pineapple chunks, green peppers, and onions.
  8. Cook for an additional 15 minutes.
  9. Blend cornstarch with a small amount of water.
  10. Stir the cornstarch mixture into the hot skillet and cook, stirring until slightly thickened.
  11. Serve hot with cooked rice.
