Ingredients

  • 1 1/2 cups dried navy or white beans
  • 6 cups water
  • 1 cup chopped onion
  • ham bone
  • 1/2 garlic clove, diced
  • 2 cups chopped celery
  • 1 cup diced carrot
  • 2 whole cloves
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 tablespoon celery seed
  • 4 cups stock
  • dash of pepper
  • 3 or 4 teaspoons sherry

Instructions

  1. Soak and cook dried beans according to package instructions.
  2. Saute chopped onion, ham bone, and diced garlic until fragrant.
  3. Combine all ingredients except the sherry into a 6-quart pot.
  4. Simmer the mixture for 4 hours.
  5. Add sherry just before serving.
