Ingredients

  • 1 lb. ground chuck
  • 1 cup minced onion
  • 1 can (2 1/2 cups) tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon curry
  • 1 teaspoon chili powder
  • 2 cups raw potatoes, sliced
  • 1/3 cup frozen cut corn
  • 1 package frozen lima beans
  • 1 green pepper, slivered
  • 1 1/2 cups (6 oz.) grated Cheddar cheese
  • 1 teaspoon salt

Instructions

  1. Combine ground chuck, minced onion, canned tomatoes, Worcestershire sauce, and salt in a bowl.
  2. Pat the mixture into a 1-inch layer in a 3-quart casserole dish.
  3. Layer sliced raw potatoes on top of the meat mixture.
  4. Add a layer of frozen cut corn, followed by frozen lima beans, and then slivered green pepper.
  5. Cover and bake for 45 minutes.
  6. Remove from oven, sprinkle with grated Cheddar cheese.
  7. Bake uncovered for an additional 30 minutes or until vegetables are tender and cheese is melted.
