Ingredients

  • 1 1/4 lb. hamburger
  • 1 egg
  • 1 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 c. soft bread crumbs
  • 1/3 c. milk
  • flour
  • 2 Tbsp. fat
  • 1/2 c. water
  • 6 carrots
  • 6 potatoes

Instructions

  1. Mix ground hamburger, egg, 1 1/4 teaspoons salt, pepper, bread crumbs, and milk in a bowl.
  2. Shape the mixture into a flat loaf.
  3. Dredge the meat loaf with flour.
  4. Brown the meat on both sides in hot fat in a heavy skillet with a cover.
  5. Add water and remaining 1/2 teaspoon salt to the skillet.
  6. Cover and simmer for 15 minutes.
  7. Add carrots and potatoes to the skillet.
  8. Cook for 30 minutes longer, or until carrots and potatoes are tender.
