Healthy Apple-Walnut Muffins

Ingredients
- 2 c. all-purpose flour ⓘ
- 1 tsp. baking soda ⓘ
- 1/4 tsp. ground cinnamon ⓘ
- 1/4 tsp. ground ginger ⓘ
- 1/4 tsp. ground nutmeg ⓘ
- 1 c. + 2 Tbsp. frozen, thawed apple juice ⓘ
- 2 small Granny Smith apples, peeled, cored and chopped ⓘ
- 1/3 c. chopped walnuts ⓘ
- 2 large eggs ⓘ
- 2/3 c. buttermilk ⓘ
- 2 Tbsp. oat bran ⓘ
- 1 small Granny Smith apple, peeled, cored and sliced for garnish ⓘ
Instructions
- Preheat oven to 375°F.
- Grease 12 muffin pan cups or line with paper liners.
- Mix together flour, baking soda, cinnamon, ginger, nutmeg, and salt.
- In a separate bowl, mix eggs, apple juice, and buttermilk.
- Stir the flour mixture and oat bran into the egg mixture until just moistened.
- Do not overmix.
- Gently fold in chopped apples and walnuts.
- Spoon batter into prepared cups, filling two-thirds full.
- Garnish each muffin with a thin apple slice.
- Bake until lightly golden and tops spring back when pressed, about 25 minutes.
- Transfer pan to a wire rack to cool slightly.
- Turn muffins out onto the rack to cool completely.
