Ingredients

  • 2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 1 c. + 2 Tbsp. frozen, thawed apple juice
  • 2 small Granny Smith apples, peeled, cored and chopped
  • 1/3 c. chopped walnuts
  • 2 large eggs
  • 2/3 c. buttermilk
  • 2 Tbsp. oat bran
  • 1 small Granny Smith apple, peeled, cored and sliced for garnish

Instructions

  1. Preheat oven to 375°F.
  2. Grease 12 muffin pan cups or line with paper liners.
  3. Mix together flour, baking soda, cinnamon, ginger, nutmeg, and salt.
  4. In a separate bowl, mix eggs, apple juice, and buttermilk.
  5. Stir the flour mixture and oat bran into the egg mixture until just moistened.
  6. Do not overmix.
  7. Gently fold in chopped apples and walnuts.
  8. Spoon batter into prepared cups, filling two-thirds full.
  9. Garnish each muffin with a thin apple slice.
  10. Bake until lightly golden and tops spring back when pressed, about 25 minutes.
  11. Transfer pan to a wire rack to cool slightly.
  12. Turn muffins out onto the rack to cool completely.
