Ingredients

  • 2 cups King Arthur whole wheat flour
  • 2 cups oatmeal
  • 2 tablespoons baking powder
  • 1/2 cup brown sugar
  • 3/4 cup golden raisins
  • 1/2 bag blueberries
  • 2/3 bag cranberries
  • 2 mashed bananas
  • 3 chopped apples
  • cinnamon
  • 2 cups skim milk
  • 1/2 cup vegetable oil
  • 2 egg whites

Instructions

  1. Mix dry ingredients (whole wheat flour, oatmeal, baking powder, brown sugar, raisins, blueberries, cranberries, chopped apples, cinnamon) in a large bowl.
  2. In a separate smaller bowl, mix wet ingredients (skim milk, vegetable oil, egg whites) and add mashed bananas.
  3. Add the mashed bananas to the wet mixture and stir well.
  4. Pour the wet mixture into the dry ingredients and barely incorporate, mixing gently.
  5. Spoon the batter into 24 muffin tins.
  6. Bake at 400°F (200°C) for 25 minutes or until golden and cooked through.
