Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • minced garlic
  • 1 can beef bouillon
  • 3 cups boiling water
  • 2 cans Italian tomatoes (1 lb 12 oz. each)
  • 1 cup red cooking wine
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package beef Rice-A-Roni (8 oz.)
  • 4 cups frozen mixed vegetables

Instructions

  1. Brown ground beef in a large kettle, breaking it up with a spoon as it cooks.
  2. Add chopped onion and minced garlic; cook, stirring occasionally until soft.
  3. Stir in beef bouillon, boiling water, Italian tomatoes, red wine, Italian herbs, salt, and pepper.
  4. Bring to a boil; lower heat and simmer for 30 minutes.
  5. Add rice and frozen mixed vegetables.
  6. Simmer for an additional 20 minutes.
  7. Serve hot; this soup makes 10 to 12 servings and freezes well.
