Ingredients

  • 2 chicken bouillon cubes
  • 2 c. diced potato
  • 1 c. sliced carrots
  • 1 c. sliced celery
  • 1/2 c. diced onion
  • 1 1/2 tsp. salt
  • 1 1/4 tsp. pepper
  • 1 1/2 c. butter or margarine
  • 1/2 c. flour
  • 2 c. milk
  • 2 c. Cheddar cheese
  • 1 c. diced, cooked chicken

Instructions

  1. Dissolve bouillon cubes in 2 cups of boiling water.
  2. Add diced potatoes, sliced carrots, sliced celery, diced onion, salt, and pepper.
  3. Cover and simmer for 20 minutes or until vegetables are tender.
  4. Do not drain the vegetable mixture.
  5. Melt butter in a separate saucepan.
  6. Add flour to the melted butter and stir to create a roux.
  7. Gradually add milk, stirring constantly until the mixture thickens.
  8. Add Cheddar cheese and stir until melted and smooth.
  9. Stir the cheese sauce into the vegetable mixture.
  10. Add diced, cooked chicken and heat through without boiling.
