Ingredients

  • 1/2 lb bacon, chopped
  • 1 apple, coarsely chopped
  • 1 cup celery, minced
  • 1 (8 oz) package cornbread stuffing
  • 2 cans Durkee onions (2.8 oz each)
  • 1/2 cup sliced almonds
  • 1 can chicken broth
  • 3/4 cup water
  • 2 eggs, lightly beaten
  • 1/2 teaspoon thyme

Instructions

  1. In a large skillet, brown the chopped bacon lightly.
  2. Drain off all but 2 tablespoons of drippings.
  3. Add the chopped apple and minced celery; cook until tender. Remove from heat.
  4. In a bowl, mix the eggs, water, thyme, and chicken broth.
  5. Combine the cooked bacon, apple, celery, onions, cornbread stuffing, and sliced almonds; mix well.
  6. Pour the egg mixture over the stuffing mixture and stir to combine.
  7. Spoon the mixture into a greased 8 x 12-inch baking dish.
  8. Cover and bake at 350°F for 45 minutes.
  9. Remove from oven, add Durkee onions to the top of the stuffing, and bake for an additional 5 minutes.
  10. Serve hot.
