Ingredients

  • 1 large cabbage (3 lb.)

Instructions

  1. Core the cabbage and place the head in a deep pot of boiling water.
  2. Let stand until the leaves are soft and pliable.
  3. Remove from water and separate the leaves.
  4. Return the cabbage to boiling water if inside leaves require further softening.
  5. Pare down the hard center rib on each leaf.
  6. Add salt and rice to the boiling water and cover; turn off heat.
  7. Let stand until the rice absorbs all water.
  8. In a large frying pan, sauté the chopped onions in bacon drippings until tender.
  9. Add ground pork and ground beef; cook until lightly browned.
  10. Combine the cooked meat with the rice mixture.
  11. Cool slightly, then add beaten egg, garlic salt, and pepper.
  12. Line the bottom of a large baking dish with cabbage leaves.
  13. Place a heaping tablespoon of the meat mixture onto each cabbage leaf.
  14. Roll once, tuck in the sides, and roll completely.
  15. Arrange the rolls in layers in the casserole dish.
  16. Season each layer with salt and pepper.
  17. Pour tomato juice over the rolls.
  18. Cover with 2 or 3 large cabbage leaves and cover tightly.
  19. Bake in a 350°F (175°C) oven for 1 hour.
  20. Uncover and continue baking and basting for another 30 minutes.
  21. Serve hot, garnished with chopped crisp bacon, sour cream, or additional tomato juice.
