Ingredients

  • 1 1/2 cups finely chopped onion
  • 1 1/2 cups finely chopped celery
  • 8 cups dry bread, torn into pieces
  • 1/4 to 1/2 cup chicken broth or water
  • 1 egg, stirred well
  • 1/2 cup butter
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 teaspoon sage
  • 3/4 teaspoon poultry seasoning

Instructions

  1. Cook onion and celery in butter in a skillet until tender.
  2. Add the cooked onion and celery mixture to the torn bread pieces in a large bowl.
  3. Sprinkle the mixture with combined seasonings: salt, pepper, sage, and poultry seasoning.
  4. Add chicken broth (or water) and the beaten egg to the bread mixture.
  5. Mix all ingredients well until evenly combined.
  6. Stuff the prepared mixture into a bird immediately and roast.
  7. Makes 9 cups, enough to stuff a 12-pound bird.
  8. Add more broth if the stuffing is not moist enough.
